Basa Fish Kababs

Ingredients
- 50g/1 lb basa fillets
- 2 large oranges
- 1 pink grapefruit
- 1 bunch fresh bay leaves
- 1 tsp finely grated lemon rind
- 3 tbsp lemon juice
- 2 tsp clear honey
- 2 garlic cloves, crushed
- Salt and pepper
Method
- Cut basa fillet into pieces.
- Use a sharp knife, pith from the oranges and garpefruit. Cut out the segments of flesh, removing all remaining traces of the pith and dividing membrane.
- Thread the pieces of fish alternatley with the orange and grapefruit segments and the bay leaves onto 8 skewers. Place the kebabs in a shallow dish.
- In a small bowl, mix together the lemon rind and juice, the honey and garlic.
- Pour overs the fish kebabs and then season well.COver and chill for 2 hours. turning occasionlly.
- Preheat the grill (broiler) to medium. Remove the fish kebabs from the marinade and place on the rack.
- Cook for 7-8 minutes. turning once, until cooked through.
- Drain, transfer to serving plates and serve with crusty bread and a fresh mixed salad.
Baked Lemon Basa

Ingredients
- 1-1/2 Ibs. Basa fish Fillets
- 2 tbsp fresh parsely. chopped
- 1 lemon (6 wedges)
- 1 tbsp oil
- Salt and fresh ground pepper to taste
- 1 tbsp lemon juice
Method
- In bottom of shallow baking or broiling pan, spread oli,lemon juice,and pepper.
- Swish fish around in pan, coating both sides. Sprinkle with parsely.
- Broil 3-4 minutes on each side or until edges are browned.
- Serve with lemon wedges and sprinkle with salt or additional lemon and pepper.
